vegetable scramble

When making today’s breakfast, I learned an important lesson…. Don’t defrost Serrano peppers in the microwave…. They explode…. Clean up on aisle 5 please!

Ingredients (makes at least 2-3 servings)

  • 4 whisked eggs

Sauté

  • 1/4 large white onion chopped

  • 1 medium sized red potato

  • 5 quartered mushrooms

  • 1/2 cup of chopped purple and green cabbage

  • 1 chicken sausage

  • 2 cut up tomatoes

  • 1 super large handful of baby spinach chopped

  • 1 chopped Serrano pepper

Add eggs once veggies are cooked and scramble together.

Season to your own taste.
