Chicken & vegetable curry

This was so incredibly delicious and didn’t take too long to make!
(Makes about 6 servings)

Veggies chopped how you like:
1/2 onion
6 mushrooms
1/2 each of orange and red bell peppers
1 zucchini
1 yellow squash
2 Roma tomatoes
1 sweet potato

Sauté your veggies in a little olive oil (I added garlic powder, cayenne, and turmeric)

Add 6 chicken legs and green curry sauce

Let simmer

Enjoy by itself or over quinoa, pasta, or rice!
