Tuna alfredo

  • 1/2 onion chopped

  • 2 stalks of celery chopped

  • 1 yellow squash thin sliced

  • I diced Serrano

  • 7 mushrooms cut in half

  • 2 huge handfuls of baby spinach chopped

  • Sauté all vegetables in some olive oil

  • Add 3 oz can tuna (21 G protein) (next time will use two cans)

  • Add 1/2 jar Primal Kitchen vegan alfredo sauce

  • Meanwhile cook one box banzas penne pasta (80 G protein in the box and 32 g fiber in box)

  • Add to tuna alfredo mix

  • Season to taste

Makes ~5 servings (1 cup each)

The protein and fiber in the pasta is super filling
