Tuna alfredo
1/2 onion chopped
2 stalks of celery chopped
1 yellow squash thin sliced
I diced Serrano
7 mushrooms cut in half
2 huge handfuls of baby spinach chopped
Sauté all vegetables in some olive oil
Add 3 oz can tuna (21 G protein) (next time will use two cans)
Add 1/2 jar Primal Kitchen vegan alfredo sauce
Meanwhile cook one box banzas penne pasta (80 G protein in the box and 32 g fiber in box)
Add to tuna alfredo mix
Season to taste
Makes ~5 servings (1 cup each)
The protein and fiber in the pasta is super filling
